Project Bake #4: Fudgy Choc-Cherry Biscuits

I really liked these biscuits. They were all crispy around the edges and chewy in the centre, and my Mums Group seemed to enjoy them this morning. However, their Number One Fan was my husband, who declared they're the best biscuits he has ever eaten.

Yes, well I'd rather not say what happened to the rest of them after you guys left. Aren't they naughty, those Fudgy Choc-Cherry guys!

Here's the recipe if you ever feel the urge to have them prey on you:

Fudgy-Choc-Cherry Biscuits)
(Australian Women's Weekly)

250g butter, softened
1 tsp vanilla extract
3/4 cup caster sugar
3/4 cup brown sugar
1 egg
2 cups plain flour
1/4 cup cocoa powder
1 tsp bi-carb soda
1/2 cup shredded coconut
1/4 cup coarsely chopped glace cherries
200g dark eating chocolate, chopped coarsely
200g eating chocolate, chopped coarsely
(note: I used Home Brand choc chips from Safeway, and the dark ones were tiny chips while the milk ones were big, and I suspect the tinies may have added to the fudgyness of the overall cookie).

Preheat oven to 180C /160C fan-forced. Line oven trays with baking paper.
Beat butter, extract, sugars and egg in small bowl with electric mixer until smooth and creamy. Transfer mixture to a large bowl; stir in sifted flour, cocoa and soda, in two batches. Stir in coconut, cherries and both chocolates.
Roll level tablespoons of dough into balls, place about 5cm apart on oven trays; flatten slightly. Bake about 12 minutes. Cool on trays.
